14 Hours…

Well, I have 14 hours of vacation left.. :( This vacation I successfully got my computer up and running again after reinstalling the OS, coded a visitor script for my websites in both Perl and PHP, found out I’m daddy to both a boy and a girl, discovered an awesome recipie for shrimp scampi, attended a class for Winblows Server 2k, and got some game time in. All in all, a nice vacation. I get another vacation at the end of the year, and I can’t wait! :)
Right now Heidi is making us a nice fried chicken dinner, or as I like to call it, fricken dinner. :) So, back to the grind and all the good things that come with it……
Any chance you wanna share the recipe? I loooove shrimp scampi.
Pretty easy. Adjust for taste of course, but here it is in a nutshell:
2 parts butter
1 part lemon juice
1 part dijon or stone ground mustard (the key)
Add parsley, minced garlic, powdered onion, and pepper to taste…
Combine all of that stuff in a sauce pan on low heat. Once it’s all melted together and yummy, pour over your shrimp in a baking dish and bake at 450 for about 14 minutes. Also, be sure to completely dry your shimp before you cook it. This is another key in shrimp cooking. :) This works for scallops too. :) Yum!
Mustard, eh? Who woulda thunk it! I’m definitely gonna give this a try.
